1/2 cup water
2 cups sugar
2 1/2 tablespoons gelatin
1/4 cold water
3/4 cup lime juice (but we used plum juice)
Green food coloring if you want it to be green
1/8 superfine sugar ( I used sugar and put it in the blender to make it superfine)
1. Butter the baking pan and set aside * 8x8 size
2. Combine water and sugar in medium sauce pan and clip thermometer to side of pan. Cook over medium heat until the mixture reaches 255 degrees F.
3. Soak gelatin in cold water in a small mixing bowl for about 5 minutes, then add cooked syrup. Remove from heat, add juice and food coloring and use whisk to blend mixture.
4 Pour mixture in prepared baking pan. Set aside for several hours or until firm
5. Turn out of pan onto a cutting surface, cut into squares, the roll in superfine sugar. Yield- bout 5- pieces
